RECIPE
1. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg, vanilla extract, and almond extract, and mix until well combined.
3. Gradually add the dry ingredients to the wet ingredients, mixing until the dough comes together. Divide the dough in half and shape each half into a disc. Wrap them in plastic wrap and refrigerate for at least 1 hour, or until firm.
4. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
5. On a lightly floured surface, roll out one disc of dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and transfer them to the prepared baking sheets, leaving about 1 inch of space between each cookie.
6. If desired, decorate the cookies with sprinkles, colored sugar, or icing.
7. Bake the cookies for 8-10 minutes, or until the edges are lightly golden brown. Remove from the oven and let them cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
8. Repeat the process with the remaining dough.
