Ingredients
- 125g plain sweet biscuits
- 60g unsalted melted butter
- 3/4 cup caster sugar
- 1 teaspoon finely grated lime rind
- 300ml thickened cream
- 2 x 250g packets of softened cream cheese
- sliced mangoes
- whipped cream

Method
- Line the base and side of a greased round spring-form pan with baking paper.
- Finely chop the biscuits by using a food processor.
- Then add the melted butter into that and process until all is well combined.
- Now you need to press the prepared biscuit mixture evenly over the base of the pan and place it in the fridge.
- Moving on to the next step, beat cream cheese until smooth.
- Add sugar and lime rind and continue beating for a couple of minutes.
- Then add cream and beat until the mixture becomes thick.
- Take your pan out from the fridge and add the above-prepared mixture into the pan.
- Place mango in a food processor and process until smooth.
- For this, you can use canned and drained or fresh mangoes.
- Fold mango through the cream cheese mixture to create a marbled effect.
- Cover with a plastic wrap and place in the freezer overnight until it gets firmed.
- Now you can transfer the mango-lime cheesecake to a plate and top with whipped cream or fruit slices before serving.
