Mango and Lime Cheesecake Recipe

Ingredients

  • 125g plain sweet biscuits
  • 60g unsalted melted butter
  • 3/4 cup caster sugar
  • 1 teaspoon finely grated lime rind
  • 300ml thickened cream
  • 2 x 250g packets of softened cream cheese
  • sliced mangoes
  • whipped cream

Method

  1. Line the base and side of a greased round spring-form pan with baking paper.
  2. Finely chop the biscuits by using a food processor.
  3. Then add the melted butter into that and process until all is well combined.
  4. Now you need to press the prepared biscuit mixture evenly over the base of the pan and place it in the fridge.
  5. Moving on to the next step, beat cream cheese until smooth.
  6. Add sugar and lime rind and continue beating for a couple of minutes.
  7. Then add cream and beat until the mixture becomes thick.
  8. Take your pan out from the fridge and add the above-prepared mixture into the pan.
  9. Place mango in a food processor and process until smooth.
  10. For this, you can use canned and drained or fresh mangoes.
  11. Fold mango through the cream cheese mixture to create a marbled effect.
  12. Cover with a plastic wrap and place in the freezer overnight until it gets firmed.
  13. Now you can transfer the mango-lime cheesecake to a plate and top with whipped cream or fruit slices before serving.
